Homemade Wild Blueberry Granola Recipe

WILD BLUEBERRY GRANOLA

Ingredients:

  • 1 cup whole raw almonds
  • 1/2 cup raw walnut halves or pieces
  • 3/4 cup rolled oats
  • 1/2 cup quinoa flakes or puffed rice
  • 2/3 cup mixed dried fruit (such as apricots, dried wild blueberries, cherries, cranberries, sultanas)
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 1/3 cup unsweetened coconut flakes
  • 2 teaspoons ground cinnamon
  • 2 teaspoons Healing Purpose Wild Blueberry powder
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons of chia seeds

 

Directions:

  1. Pre-heat the oven to 140 degrees Celsius. Line a large, rimmed baking tray with baking paper.
  2. Place 1/2 cup of the almonds into a food processor and process for about 10 seconds, until the almonds are fine, like the sand. Transfer the almonds to a large mixing bowl.
  3. In the food processor add the remaining 1/2 cup almonds and all the walnuts and process for about 5 seconds, until chopped into big chunks. The texture should be a mix of fine powder and big pieces. Add the mixture to the bowl with the almonds.
  4. Add the rest of the dry ingredients in the bowl: oats, quinoa flakes or puffed rice, dried fruit, pumpkin seeds, sunflower seeds, Healing Purpose Wild Blueberry powder, coconut, cinnamon and chia seeds. Mix well.
  5. Add the maple syrup, oil, and vanilla to the bowl and mix until well combined.
  6. With a spatula, spread the granola into a 1 cm (1/2 inch) thick layer on the prepared baking sheet and gently press down to compact it slightly
  7. Bake for 20 minutes, then rotate the pan 180 degrees and bake for another 18 to 25 minutes more, or until the granola is lightly golden on the bottom and firm to the touch. You can try the texture with a spoon.
  8. Cool the Wild Blueberry granola on the pan for at least 1 hour before breaking it into clusters or crumble.
  9. Store the blueberry granola in a jar at room temperature or fridge for 2 to 3 weeks. If storing in the fridge, please make sure it is completely cooled before transfer to prevent condensation.

Enjoy this Wild Blueberry Granola with yoghurt, sprinkled on smoothie bowls, with your favourite milk, or as a delicious snack on its own.

Feel free to customise the selection of nuts and dried fruit to suit your taste and dietary needs.
