
Raspberry & Wild Blueberry Chia Jam
Ingredients:
- 2 cups fresh or frozen raspberries
- 2 tbsp chia seeds
- 1-3 tbsp maple syrup (depending on the sweetness of the raspberries)
- ½ tbsp lemon juice
- 1 tbsp Healing Purpose Wild Blueberry powder
Instructions:
- Cook the Raspberries: In a small saucepan, cook the raspberries over medium heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble (around 5-7 minutes). Use a spoon or potato masher to mash the fruit to your desired consistency.
- Add Sweetener and Chia Seeds: If you prefer a sweeter jam, add the maple syrup at this stage. Stir in the lemon and chia seeds and cook for another 1-2 minutes, allowing the mixture to thicken slightly.
- Cool and Add Blueberry Powder: Remove the pan from heat and let the jam cool and chia seeds to thicken further (around 10 minutes). Once cooled, stir in the wild blueberry powder. Mix well to ensure the wild blueberry powder is fully incorporated.
- Store and Serve: Transfer the jam to a clean jar and store it in the refrigerator. It should last for up to a week.
- Enjoy: Spread your homemade jam on toast, add it to yoghurt, or use it as a topping/filling for desserts!
Tip: It’s just as delicious without the lemon! I sometimes skip it because my kids prefer a milder flavour.
